Description

This Yellow Catuai varietal is grown at an altitude of 3600 feet, natural processed, sun dried on patios. Eldo Barros, or “Mortadella” to those in his community, is a coffee producer from the Posses community in the Campestre region of Minas Gerais. His nickname (and name of his farm) comes from his childhood habit of only eating the mortadella out of sandwiches his mother gave him. Over the years, the name stuck, and he now prefers the name.  The ripe cherry project was implemented last year, where a plot of the farm was set aside for harvesting only the perfectly ripe cherries. This is more labour intensive than the usual method of stripping all the cherries, ripe or not and yields an exquisite coffee. Mortadella is aided by his father Acacio and wife Elina, producing only 5 bags of this micro-lot.

The cup is medium body, medium acidity, very sweet with tastes of watermelon, strawberry and cane sugar.
