Yunnan - Moon Bear
MOON BEAR is produced using the Honey Process, designed to highlight the
coffee’s natural sweetness and smooth flavor structure. Coffee cherries are selectively hand-picked at peak ripeness, ensuring that only evenly matured deep-red cherries are harvested. After harvesting, the cherries undergo clean-water flotation sorting to remove under-ripe fruits and low-density defective cherries. The cherries are then depulped using professional equipment, removing the outer skin while retaining a controlled layer of mucilage. This sticky layer, rich in natural sugars and pectins, gradually undergoes gentle fermentation during the drying stage, contributing to enhanced sweetness and body in the final cup.
The mucilage-covered beans are evenly spread on raised drying beds for natural sun
drying. Under Yunnan’s stable dry-season climate and gentle valley breezes, the beans slowly dehydrate over 15–18 days. During the day, soft sunlight promotes sugar transformation, while cool mountain winds at night help remove excess moisture, maintaining a stable and controlled fermentation environment. This slow and carefully managed honey-processing method allows the coffee to retain clarity in structure while developing a rounder body and more pronounced fruit sweetness.
After drying, the beans undergo hulling, sorting, and a resting period, allowing the flavor
profile to stabilize and ensuring consistent bean quality.

As the coffee temperature gradually decreases, the berry sweetness and tea-like structure
become more pronounced, revealing greater depth and complexity in the cup.

On the first sip, the coffee reveals a vibrant sweet-tart sensation reminiscent of orange, with bright and refreshing acidity accompanied by subtle citrus-peel aromatics, giving the cup a clean and lively character.
As the flavour develops through the mid-palate, the acidity gradually softens into a gentle
berry-like sweetness, creating a smoother and more balanced mouthfeel.
The cup cools to a black-tea-like texture and delicate tea structure begin to appear. This
tea-like quality adds elegance and length to the finish while maintaining the coffee’s
refreshing character.
